The Vinaigrette
1/2 cup olive oil
1/2 cup balsamic vinegar
1 1/2 tsp salt
1 1/2 tsp coarsely ground black pepper
1 tsp sugar
2 medium yellow peppers
2 medium red peppers
4 small zucchini
1 eggplant
2 medium portobello mushrooms
Marinate veggies for about 2 to 6 hours
(I prefer the longer time as they are more flavorful)
Cook over medium heat grill until brown and tender when pierced with a fork
Serve as a side dish or on a nice roll with fresh lettuce and grated Parmesan cheese
